chocolate chip & blueberry muffins


chocolate chip & blueberry muffins [makes 12]

  • 1 3/4 cups all-purpose flour
  • 1/3 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/2 cup fresh blueberries
  • 1/2 cup dark chocolate chips
  1. Preheat oven to 400 degrees F.  Grease muffin pans, or line them with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.  Add milk, egg, and butter.
  3. Mix until ingredients are moistened.  Do not overmix.  Stir in blueberries and chocolate chips.
  4. Spoon batter into the muffins (about 2/3 - 3/4 full).
  5. Bake in oven for about 20 mins, until the tops spring back when lightly touched.
Serve warm and enjoy!
